Perogis (Pedeheah)

Either round wonton wrappers OR
 
Dough:
2c flour
1 egg
1/2 c water
1 TBL oil
1/2 tsp salt
Mix well & knead until elasticized
 
Filling:
4 potatoes, mashed
1/2 c cottage cheese
4 oz cream cheese
1/2 medium onion, chopped
1 cup grated cheddar cheese
 
Cut dough (or use prepared wonton wrappers) into circles; fill & pinch closed (will look like a half circle).
These can be boiled (bring salted water to boil in a large pan.  Add perogis & boil until they float), baked (375 for 8 minutes), sauteed in butter (4 minutes on a side), or deep fried.
