Chicken & Rice Casserole

1 c rice
1 1/4 c chicken broth
2 T olive oil
2 c cooked, shredded chicken
1 can cream of onion soup
1 c light sour cream
1/2 c milk
1/2 c chicken broth (in addition to the other)
1 tsp salt
1/2 tsp pepper
1 c shredded cheddar cheese
1/4 c bread crumbs
 
Preheat oven to 350 degrees.  Grease a 9 inch square pan
 
Bring rice & 1 1/4 cup chicken broth to a boil in a saucepan.  Reduce to medium/low, cover & simmer 20-25 minutes
 
Heat oil in a pan, add soup, chicken, sour cream, & milk, 1/2 c broth, salt, pepper.  Reduce to low, add rice & combine.  Put in baking dish.
 
Bake 15 minutes; top with cheese & crumbs, bake another 10 minutes!
