Quinoa & Black Beans

1 tsp vegetable oil
1 onion, chopped
3 cloves garlic, minced
3/4 c quinoa
1 1/2 c vegetable broth
1 tsp cumin
1/4 tsp cayenne pepper
salt & pepper to taste (about 1 tsp of each)
1 c frozen corn
2 (15 oz) cans of black beans
 
Picante sauce, if desired.
 
Heat oil in medium saucepan over medium heat; saute onion & garlic until lightly browned.  Mix quinoa & cover with stock.  Season.  Bring to a boil, cover & reduce heat, simmer 20 minutes.
 
Stir in corn & beans, simmer 5 minutes.
