Falafel

1 15 oz can garbanzo beans, rinsed & drained
1 med onion, coursely chopped
2 cloves garlic, minced
1/2 tsp ground cumin
1 tsp dried oregano
1 TBLS fresh lemon juice
Salt & pepper to taste (I use 1 tsp of each)
1 c dry bread crumbs
1 large egg, lightly beaten with a fork
 
In a food processor, process garbanzo beans, onion, garlic, cumin, & oregano until smoth; season with lemon juice, salt & pepper; add 1/2 cup of the bread crumbs & egg.
 
spread remaining bread crumbs on a plate.  Using your hands, form the bean mixtureinto round balls, rolling each ball in the bread crumbs to coat.  Set the balls on wax paper until you have them all coated.
 
Spray a large nonstick skillet with the cooking spray, heat over medium heat until hot.  Add falafel balls an cook, stirring until balls are browned, about 10 minutes (I usually flatten them a little to make sure the center gets cooked through).
 
I serve this with pita bread, tomaotes, feta cheese & tzaziki.
