Tzaziki

1 medium cucumber, peeled, sliced & half & seeded, then finely chopped
1/4 tsp salt
1 cup plain yogurt
 1 TBL olive oil
 1tsp freshlemon juice
1 tsp minced fresh dill or oregon leaves (I usually do half & half)
1 tsp minced garlic
1/2 tsp paprika (I use a super secret blend that I get from a fabulous restaurant in upstate New York...don't know what's in it, but it adds a kick)
 
Mix & chill for an hour before serving.
