Light Spice Chicken Soup

1 pound chicken breast
4 cups water
1 cup picante sauce
1 can corn
1 tsp salt
1 tsp pepper
1 TBL onion powder
In a crockpot, put chicken, salt, pepper, onion powder, & water & cook overnight (at least 6 hours); remove chicken from broth & shred with two forks, strain broth to remove floating bits (ew);  Put 3 cups of broth, the shredded chicken, corn & picante sauce in pot & heat through.
Serve with avocado & cheese, if desired.
Chicken can be cooked on the stove in a large saucepan.  Cover chicken with water & spices & cook until chicken is thoroughly done (no longer pink in the middle & kind of falling apart).
