Shredded Beef with Grits

1 lb beef (I used stir fry beef, but you could also use stew meat)
1 small onion, chopped
1 bottle Kraft barbecue sauce
4 packets of instant grits
1 c cheddar cheese, shredded
2 tsp garlic
 
Cook the beef all day in a crockpot (I put the beef in the bottom of the pot, add 2 c red wine, 1 packet of Good Seasons dry Italian salad dressing mix, and 8 cups of water (save the beef stock for other recipes!)
 
To prepare, remove beef from crockpot and shred.  In a bowl, add the  chopped onion, beef, and barbecue sauce...mix well.  Put in the bottom of a baking pan (I use my crockpot again).  
 
In a small bowl, mix the grits and boiling water (follow package directions).  Once the grits are ready, mix in the garlic and cheddar.  Spread mixture over the shredded beef.  
 
I usually do this the day before I am going to serve it.  When I'm ready to cook it, I put the crockpot in its base and turn it on for a few hours to heat through.  
 
Serve with sliced bread.
