Mile High Enchilada Pie

corn tortillas
Picante sauce
shredded cheddar (or Monty Jack, if you prefer)
cooked meat (I've used either shredded chicken or ground beef)
Spray the bottom of your pan with Pam.  Cover the bottom of the pan with corn tortillas (the number depends on the size of your pan).
Sprinkle some of the meat on top, then some cheese, then some picante sauce....repeat the layers until your pan is full, top with extra cheese.
I do this in my crockpot and cook it for about 2 hours on  high...if you do this in your oven, try 350 degrees for about 30 minutes (the cheese will be bubbly.
