Black Eyed Pea Soup

1/4 c margarine
8 slices of bacon - I prefer to cook it in the oven so it is crispy, but you can cook it with the onions, too
1 med onion, diced
3 cans black-eyed peas, rinsed
1 can Rotel
1 bottle Shiner
4 c Chicken broth
spices to taste  I use salt, pepper, and Cayenne
2 cooked chicken breasts, chopped.
 
Cook chicken, Shiner, spices and enough water to cover the chicken for 30 minutes, or until chicken is cooked through.  Let cool, reserving the broth.
 
In a soup pan, cook onions in margarine until they are translucent, and peas, Rotel, and reserved broth.  Chop chicken and add along with chopped bacon.  Heat through and serve.
